Plus ghee has a strong flavor and mayo is typically done with neutral oil. Butter on a sandwich serves the same function as mayo if that's the flavor you're after.
I'm gonna agree with others in that it needs to be an emulsion and that's gonna be hard to do in a way that's temperature controlled enough that doesn't also cook your eggs
My understand of what God was/is/could be dramatically shifted in the last number of years.
