Dear Acme Acres Community, This week on the ranch was one long reminder of why we do things the hard way. It would be easier to cut corners. Use what’s legal. Push animals faster. Rely on one processor and hope nothing breaks. Plenty of folks do. That’s never been the point here. We don’t use vaccines, GMOs, hormones or antibiotics because the way we raise animals doesn’t require them. Our cattle, pigs, sheep, and chickens live outside, on grass, with room to move and low stress. Healthy conditions create healthy animals. It really is that simple. A lot of folks ask what happens when processors shut down or get backed up. You’ve seen it in the news. Plants close. Timelines explode. Food gets harder to find. We don’t wait around. Right now we work with multiple processors across Idaho and Washington. It means more miles, more coordination, and more hustle. But it also means we keep delivering when others can’t. That mindset carries into everything we do. It’s why whole beef orders come with a freezer. Space is usually the real obstacle, not price. I still buy freezers at wholesale, so I use that to remove friction. If you don’t need it, we take it off the price. Simple. It’s also why we accept Bitcoin, gold, silver, and trades. Food is foundational. People have different ways of storing value. We’re happy to meet you where you are. On the food side, we’ve had more positive feedback lately than ever — especially on the beef. Finishing on grass through Idaho winters isn’t fast or cheap. Some months we gain. Some months we hold. We don’t rush it. Our Longhorn–Charolais crosses are doing exactly what we hoped: hardy, efficient on grass, and producing beef people keep calling us back about. We’re also keeping sausage bundles available, fresh pork sausage — clean, simple, and made from animals raised the same way as everything else here. If you want something specific, ask. If it makes sense, we’ll figure it out. One thing worth saying out loud: buying bulk meat takes planning. This isn’t grocery-store logistics.
