Same reason as to why Bitcoin block takes 10mins - it’s an arbitrary number to adjust for bad actors, black swan events and to give some kind of predictability. I.e. if you take mortgage in block XYZ it’s easy enough to tell when it happened. Even more so with 2016 blocks. Such rates adjustment would introduce stable yet flexible market rates to act upon and plan how you spend, lend and borrow your money.

Interest rates are not what we voted for! They are the main tool central banks use to manipulate money supply and control the markets. What if we let the % the market decide what it’s willing to pay? To avoid chaos we could sync it with Bitcoin’s difficulty adjustment and every 2016 blocks (roughly 2 weeks) adjust the % according to markets. What would be the consequences of such experiment?
