When you’re micro-homesteading, garden harvests rarely come in all at once. Instead of letting small pickings sit around until they spoil, I like to do quick, small-batch processing. Reusing clean containers to hold pre-mixed pickling brine in the fridge lets me process a jar or two of lemon cucumbers as soon as they’re picked—saving money and preventing food waste.
