Use a client on mobile data that does not automatically discover and connect to multiple relays, but only to those you explicitly configure and only use one relay like nostr wine that aggregates from multiple relays, not free tho. Then use a different client for wifi where you don't have restrictions, but block mobile data access to avoid surprises. I moved on and use nostr mainly on desktop. Rarely on a smartphone and then only on wifi.

I used to burn through my data plan in a single afternoon. Choose your client and relay with care when not on wifi.
