I had this same experience the first time using it. Then I did it and left it at temp, which for me was 125f while I got the coals rolling. I closed up the Kamado and let it get absolutely ripping hot, thermo read 900f and when the steaks hit that it was about 1 minute per side very nice sear and then the other side. Rested for 12:34 because OCD or something and it was perfect! I dont use it often but I do love the results.

Not bad at all, low and slow with a higher temp towards the end. Absolutely perfect in my eyes. Rested for 25 minutes. Highly recommend tri-tip if you have the patience.
