I am using wood quite often for cooking and definetely for heating. Also i solar heating for water and occasionaly solar generators to charge devices. I do not use air condition (strange that it is possible in Greece, i know). We have less than half of that.

Then you can also consider didiwiki. It should be on the repos too. It is a very simple personal wiki. It has the disadvantage that it cannot hold images or videos by itself,but you can use another web server like lighttpd to point your stuff there (and also use lighttpd separetely so it can do two jobs). Another light server you might be able to host is ntfy.sh for push notifications, which is very nice. Finally i think shiory, for bookmark management is light enough. Personally i would try also memos for note taking. I am sure all these are enough to experiment and make the machine useful while also being able to use it as desktop if you want at the same time.
It has also a client app in fdroid.
As a desktop antix is better choice yes. Alpine is for projects. Slitaz's philosophy is do well one thing with minimal resources. It to run a firewall for thenetwork, a proxy server, stuff like that.
I think i would go with alpine linux or maybe slitaz.
Also consider to play with radicale. It is also very light and it should be in the repositories
