You only need 3-5 good, appropriate relays per category. More than that will degrade client performance. Different types of relays perform different tasks. It's important to connect with the correct types of relays more than anything. You can a bit of see what particular relays do at https://nostr.watch . Many of those listed above will provide no benefit, if you attempt to read/write to them. Adding all, or even adding randomly, is not good advice.
It would be great if everyone would or could... at least a local, personal one to back up each own's data. A relay that's publicly accessible but still for personal use is a step up. Hosting for a few friends, family, or small community is another... and so on. Anyone can do it on their machine, vps, or use a hosted "rental" service, as I call it, like relay.tool . What it entails is ultimately determined by what you want to do. Whether one wants to contribute to others, build a business around their relay(s), protect their own ability to speak, or just to preseve data, there is plenty of incentive to do so.

You'll want to put wss://nostr.wine in your write/outbox relays. If you also purchased the wss://filter.nostr.wine subscription, you will want to put that one in your read/public inbox relay list, too. It looks like you're connecting to quite a few relays. You only need a few, maybe 3-4 per category. You can probably drop some of those and save on bandwidth and data consumption while not effecting your experience. Removing some, like nostr.band, might actually improve performance.
